Can you believe it’s already Fall?!? Crazy how fast the summer flew by. With the Fall, comes some of our favorite things of the year, time for friends, cozy sweaters and our favorite…FOOD! It’s the perfect time of year to make your favorite dish, snuggle up and watch football ( insert food coma here #sundayfunday).In todays post Soho2Noho is sharing some of our favorite fall recipes!
#ATS here! Now, if you know me you know two things about me…1.) I love to eat and 2.) I hate to cook (not a good combo, I know)…. Growing up I was always the one to disappear somewhere in the house when it came to lending a helping hand with the cooking…but the first to volunteer to clean it up. Over the last few years since living alone I have had no choice but to learn how to cook, and go figure – now I actually enjoy it (sometimes.) I have always loved to bake and can pretty much make any desert you’d like, but there are few entrees in my recipe file. One of my fav’s just happens to be a fun fall recipe perfect for entertaining on one of those football Sundays.
Twice-Baked Sweet Potatoes w/ bacon, brown sugar & marshmallows!
What you’ll need:
Medium size sweet potatoes (3 1/2 to 4 lb.)
1 tbsp. vegetable oil
8 slices bacon (you can use turkey bacon or regular) (8 oz.)
1/4 c. plus 2 tbsp. light brown sugar
1 c. mini marshmallows..(or add a few more if you have a sweet tooth like me)
Cinnamon, for dusting

The fall is all about fall flavored drinks, from Pumpkin Spiced Lattés to Salted Caramel Martinis. This fall I decided it’s time for something with more bubbles – So I am all about the Apple Cider MIMOSA! It’s sweet. It’s tart. It’s bubbly. And it’s a perfectly acceptable reason to pop the cork on a bottle of champagne on a totally random Thursday evening. Life is too short to wait for special occasions!
I am not much of a cook, although I try, so this recipe is nice an easy, even I can do it! Only two ingredients, and it’s exactly the two ingredients you think it is – apple cider and champagne. Why mess with perfection? And it seriously is total perfection. What makes this delicious fall inspired mimosa so perfect, why the local Apple Cider of course! Northampton is a wonderful city full of culture, art and delicious food but one thing I love about Northampton is its location to so many local farms. We have a wealth of apple orchards within a short distance from us, and one with some of the greatest Apple Cider is Carlson Orchards, although they are the farthest of the many, about a day trip away, you can purchase their amazing Apple Cider from other local grocers or farms like my all time favorite Atkins Farm, only 15 minutes down the road! Their premium blend cider is made from only the freshest apples which make for the perfect cider, and the perfect cider is just the ingredient we need for our new fall favorite drink!
Apple Cider Mimosa
3 oz Champagne
3 oz Apple Cider (I use Carlson Orchard Cider)
Cinnamon & sugar mix for the glasses rim, optional
apple slices for garnish, optional
This is a great recipe for a fun fall party with friends, but can also be enjoyed if you’re just in the mood for champagne by yourself but do not want to waste an entire bottle for just one drink (maybe two, these are delicious!) You can now enjoy a single serving of champagne by purchasing the small four-pack from your local liquor store, they are the perfect size for everyday celebrations. You can get three or four small, toast-worthy glasses of champagne out of each bottle. And two, oh-my-gosh-this-mimosa-is-delicious mixed drinks out of it. I almost always have these mini bottles in our fridge. You never know when today is going to be worth celebrating!
