Happy Friday Lovelies!
What a crazy couple of days with this spring like weather! I have been completely enjoying the 50 degree temps, and just want them to stay. Who is with me!? Well this weekend Robert and I are celebrating our Valentine’s Day, we held off until now so that could continue to work on our healthy living throughout the week and allow ourselves a little treat over the weekend!
We are heading to one of our favorite local spots for one of those full on apps to dessert kind of meals at Spoleto’s! We love having the chance to enjoy dinner without a rush, including before dinner cocktails, sharing an app, ordering delicious main course meals, then completing the evening with a shared dessert and after dinner drink – I mean what a way to celebrate us! Before we celebrate our Valentine’s on Saturday evening, we are heading to a Springfield Thunderbirds game tonight! I know absolutely nothing about hockey, but watching the Olympics has gotten me excited for all things winter sports! We love living in an area where local teams are pretty good and fun to watch, like the Springfield Thunderbirds Hockey, or even the near by Hartford Yard Goats baseball team, The name is silly but the games are fun to watch! I haven’t been to a hockey game since college when I went, maybe one time, to watch my roommates now husband play for our school. I am looking forward to seeing another game and enjoying a hotdog!
My update on the healthy living. It has been a little tough with the gym for week 4, I did not make it Saturday because I had seemingly strained both of my hamstrings during one of my last workouts, of course I would! So I took Saturday and even Monday off to rest my legs. I accidentally took Tuesday off too (sad-face emoji here) I was just too darn tired from not sleeping well, but we made it the remainder of the week and even plan on a morning session tomorrow! For those of you thinking about my hamstrings, after resting them and moving back into a run slowly, they are feeling like new! Oddly enough because I wanted to be extra careful eating lightly since I was missing the gym, I am actually feeling lighter then my previous 3 weeks, go figure! It’s either a fourth week weight drop or just happy accident, but I am feeling good – maybe a break for the body is good every once in awhile! This coming week I found a new light Kale, white bean and sausage soup recipe that I am excited to try! This is packed with nutrients and this should have so much flavor because of the sausage. I will share the details below if you want to test it out too!
1 Tbsp olive oil
12 oz of Sausage, sliced into 1/4-inch thick slices
1 1/2 cups chopped carrots (about 3)
1 1/3 cups chopped yellow onion (1 medium)
1 cup chopped celery (2 stalks)
4 cloves garlic , minced
3 (14.5 oz cans) low-sodium chicken broth
1 cup water
1 Tbsp dried parsley
1 tsp dried rosemary
1/2 tsp dried oregano
Salt and freshly ground black pepper , to taste
6 oz kale , thick ribs removed, chopped (about 1 1/2 bunches. 5 oz if using pre-cut)
2 (14.5 oz) cans cannellini beans, drained and rinsed
Shredded parmesan cheese , for serving (I am skipping this part)
- Heat olive oil in a large pot over medium heat. Add sausage and cook until slightly browned, tossing occasionally, about 5 minutes. Remove sausage, while leaving oil in pan, and drain sausage on a plate lined with paper towels and set aside.
- Return pot with oil to medium heat, add carrots, onion, and celery and saute 3 minutes (while scraping bottom of pan to get the browned bits), add garlic and saute 1 minute longer. Stir in chicken broth, water, parsley, rosemary, oregano and season with salt and pepper to taste. Bring to a boil over medium-high heat, and allow to gently boil 10 minutes. Add kale and allow to boil 10 minutes longer until kale and veggies are tender. Stir in cooked sausage and cannellini beans (you can add more broth at this point to thin if desired). Serve warm.
